Wheat

Wheat is used in a number of products and since deregulation of the wheat market in 1989, it has been possible to have wheat grown under contract in a similar fashion to maize.

This allows for much better control of the material used with a consequent increase in quality of finished food. Soft wheat is used for some products because of the particular characteristics suitable to these products. It is selected for grain size from specific varieties, mainly grown in the southern part of NSW. Hard wheat varieties from northern NSW and southern Qld are also used where ingredients requiring higher protein contents are specified.
