Ingredients
3 x 70g eggs 3 cups Kellogg's® Rice Bubbles® 1 ½ cups parmesan cheese, grated 1/2 cup fresh herbs, finely chopped* Salt and freshly ground black pepper 1/3 cup coconut, toasted 2 cups Kellogg's® All-Bran®

Method
Pre-heat oven to 190°C. In a large bowl, whisk together eggs. Combine with remaining ingredients and mix well. Press a tablespoon of mixture into a flat round shape and bake for approx. 10 minutes or until golden brown. Serve immediately with an antipasto platter with cheese or with soup. * We used basil and parsley.
