What is gluten?

Gluten is essentially protein found in a number of grains. Gluten is the protein that is responsible for the elastic texture of dough which is essential for making bread.

 

Why Do Some People Avoid Gluten?

Not everyone is affected by gluten.

However, there are people who suffer from a condition called coeliac disease where their body produces a response to the gluten. Their gut becomes inflamed and can no longer absorb nutrients effectively. People with coeliac disease need to follow a strictly gluten free diet for life. It can be very challenging for them to find tasty options to replace the foods they love. There are also people who develop uncomfortable gut symptoms from eating foods containing gluten. These people prefer to eat foods either low in gluten or with no gluten to minimise their symptoms.
