Baklava Inspired Special K® Crunchy Granola


Start your day the Chobani way, with a crunchy twist from Special K®!

This baklava inspired recipe is perfect to make in advance, for a nutritious and delicious healthy snack or brekky. We’ve paired Special K® with a combination of nuts and spices, sprinkled on top of @ChobaniAU No Sugar Added Apple Cinnamon Greek Yogurt. Get the recipe below!

INGREDIENTS

  • 3 cups Special K® (Original or Gluten Free)
  • 1/3 cup raw walnuts
  • 1/3 cup coconut flakes
  • 1/3 cup pistachios
  • 1/3 cup slivered almonds
  • 1/3 cup butter
  • 1/3 cup maple syrup
  • 1/4 cup almond butter
  • 1 tsp ground cinnamon
  • 1 tsp Sea Salt
  • TO SERVE
  • 150 g Chobani No Sugar Added Apple Cinnamon Greek Yogurt

DIRECTIONS

1. Preheat oven to 170C.
2. Place dry ingredients (walnuts, coconut flakes, pistachios, almonds) in large bowl.
3. Add wet ingredients (butter, maple syrup, almond butter) into small pan and stir over medium heat until combined.
4. Pour wet ingredients into dry and stir thoroughly. Transfer to baking sheet pressing the mixture down gently with spatula.
5. Sprinkle evenly with cinnamon and sea salt.
6. Bake in the oven for 10 minutes, turn the pan halfway and stir, then bake for another 10 mins until golden brown and crispy. Watch closely to ensure it doesn’t burn!
7. Let cool and store in airtight container.
8. Serve ½ a cup of the mixture on top of Chobani Yogurt, with a squeeze of honey (optional) for a crunchy and creamy delicious breakfast or snack!
