Special K® Cake with Lemon Elderflower Cream Cheese Frosting
INGREDIENTS
- 2 cups Kellogg's® Special K® Original
- 1 ¾ cups milk
- 1/4 cup unsalted butter, room temperature
- 1 egg
- zest of 1 lemon
- 3/4 cup dark brown sugar
- 2 cups plain flour
- 1 tablespoon baking powder
LEMON ELDERFLOWER CREAM CHEESE FROSTING
- 1/4 cup plus 1 tablespoon cream cheese, at room temperature
- 3 tablespoons unsalted butter, softened
- 2 cups icing sugar
- zest of 1 lemon
DIRECTIONS
1. Preheat the oven to 350°F.
Grease and line an eight-inch square cake tin.
2. In a large bowl soak the Kellogg’s® Special K in the milk for about 30 minutes. Stirring occasionally.
3. Cream the butter and sugar in a food mixer until combined. Add the egg and lemon zest and mix again.
4. Stir in the flour, baking powder and Kellogg’s® Special K® mix and stir until combined. Spoon into the prepared cake tin and bake in the center of the oven until a toothpick inserted into the cake comes out clean.
5. Remove from the oven and place on a cooling wire to cool.
Lemon Elderflower Cream Cheese Frosting:
1. In a food mixer, cream the butter, cream cheese, lemon zest and icing sugar until smooth.
2. Slice the cake and fill with layers of the butter cream.
